Recipe: Banana Oatmeal Chocolate PB Cookies

Longest.Name.Ever. I got the recipe from Bethenny Frankel's Website. But, I just wouldn't be me if I didn't change the recipe, no? So, of course I changed it! I love Bethenny, even though she may be a little moody and neurotic. But, I think she is someone that has created a very successful business and I love her no nonsense attitude.

With that being said here is the recipe!


May not be pretty, but soooo yummy!


Ingredients:
-1 1/2 cups all purpose flour
-3/4 cup oats (I used Quaker Instant)
-1/2 tsp baking powder
-1/2 tsp baking soda
-1/2 teaspoon salt
-~1/3 to 1/2 cup of Splenda (Say what you will, but I love splenda!)
-~1/3 cup chocolate chips (found some dark chocolate ones that are AMAZING)
-1 tsp oil (I only had olive oil, but it calls for canola)
-1/3 cup Almond Milk (best stuff ever, seriously, if you haven't tried it go buy some. Now.)
-1 medium banana pureed and 1 Tbs unsweetened applesauce
-1 tsp vanilla extract
-1 to 1.5 Tbs Skippy Natural Peanut Butter (optional)

Preparation:
-Preheat oven to 375 degrees F
-Combine all dry ingredients
-Combine all wet ingredients
-Mix dry with wet
-Generously spray baking pan and scoop cookies onto pan
-Bake for ~12 minutes, until light brown
(ps- Her website says to use wax paper...trust me...DO NOT use wax paper in the oven...you will definitely set your smoke alarm off. Use parchment paper instead)

I think these would probably be okay with whole wheat flour too (or a half and half mix of AP and WW), I just know that the hubby gets a little tired of me making everything with wheat ;)
