Recipe: Sun-Dried Tomato Chicken

The semester is finally over! I wish I could say that I'm relieved, but I'm still waiting on one more grade so I can't relax until it's posted. I am excited, however, to start my practicum next week! I will be with the Diabetes Educator at a local hospital all summer and I will also be taking my second anatomy class. One more year and I will be graduating...again! haha.

I had two great friends over the other night and I made BBQ Blue cheese Turkey Burgers with sweet potato fries. I must say, it was pretty delicious! I didn't take a picture, but I will post the recipe later!

Last night I made this recipe and I'm pretty sure the hubby said 'this is good' about 10 times while we were eating. So it must have been good!

I am obsessed with sun-dried tomatoes and put them on a lot of things! Here is the recipe!


Ingredients:
(don't worry about being too specific, I just sort of threw this together)
-2-3 Chicken Breasts
-1 tsp Basil
-1 tsp Oregano
-1 to 2 tsp Minced Garlic
-~1/3 cup Julienned Sun-dried Tomatoes (In publix they are in the produce section in bags)
-1/4 to 1/3 of Cheese (I used a Mexican Mix, but I think Feta would be great also!)
- 1 to 2 tsp Olive Oil

Preparation:
-Preheat oven to 400 degrees F
-In a small bowl, mix together: Basil, Oregano, Garlic, Tomatoes, Cheese and Olive Oil
-Slice the chicken breasts open (not all the way through!)
-Stuff the chicken breasts with the mixture from the small bowl
-Place any of the leftover mixture on top of the chicken breasts
-Bake the chicken in a glass baking dish for about ~30 minutes or until done (Depending upon the thickness of the chicken)
-Serve and enjoy!

I served it with a side salad, steamed broccoli and brown rice. Let me know if you like it or if you have any suggestions!
