Recipe: Italian Bread

Remember how we talked about indulging, etc? Well, bread is one of my vices. I'm a sucker for fresh, warm bread. Have you ever had the spinach and onion bread-sticks at DePalma's? Heaven I tell you, heaven. (Speaking of, I must find a similar recipe and experiment...next post.)

I wanted to break out my bread machine because I haven't used it in a while. I seriously suggest for anyone who loves fresh bread to get a bread machine. I love mine. It's so incredibly easy. You just put the ingredients in, pick your settings (wait 4 hours) and voila! You have fresh homemade bread!

I did a mixture of two recipes for this bread and added a little twist of my own (What is my problem with following recipe directions? Eh.)


Ingredients:
-1 1/4 cup water
-1 1/2 Tbsp Olive Oil
-1 tsp Salt
-3 1/2 cup Bread Flour (I used Gold Medal)
-2 tsp Sugar (Splenda)
-1 tsp Dried Basil
-1 tsp Dried Oregano
-1 tsp Garlic Powder
-2 tsp Active Dry Yeast
-1/4 cup Mozzarella Cheese or Parmesan

Directions:
-Follow your bread machine instructions as to whether you should put dry or wet ingredients first. For mine, I put the wet ingredients first, then dry, then I make a well for the yeast and put it in.
-Make sure that the yeast never comes in contact with any of the wet ingredients!
-I put this on my 'French' setting and a medium crust. It took about 3.5 hours to bake.




The house smells so good while it is cooking!!

I taught cycle at 5:30AM this morning and I'm teaching again in an hour! Burnin' those calories! I may need to make more bread! ;)

Recipe: Light Turkey Meatballs

I was trying to think of something different to do with our ground turkey instead of making turkey burgers...again. Apparently, ground meat is limited to meatloaf, lasagna and burgers. Meatballs weren't really an option at first because...I hate meatballs. 200 years ago when Subway first opened, I had my first sub and it was a meatball sub. Worst.sub.ever. It was not good at all to me. So, I've hated them ever since. But, I thought it was time to branch out and give them another chance and thought I would share the recipe/concoction with you guys! I thought they turned out pretty good and so did DH!






Ingredients:
~1 lb LEAN ground turkey
-1/4 cup chopped onion (I used 1/2 medium Vidalia Onion)
-1 tsp Basil, dried
-1 tsp Oregano, dried
-1 Tbsp garlic, minced (what, we like garlic)
-1/2 cup breadcrumbs
-1 egg, beaten
-Salt & Pepper

Directions:
-Mix all ingredients together in a bowl
-Spray pan with Pam or use Olive Oil
-Shape meat mixture into balls (about 1" to 1-1/4")
-Place in pan and brown on each side until done (around 5-7 minutes each side)



-Serve!


I served these with whole wheat linguine and diced tomatoes. I also broke out my bread-maker and made some awesome Italian bread to go with it! I will post the recipe for the Italian bread as well!

Update: I Couldn't Think of a Clever Title

Throughout the day I will have these awesome and inspiring ideas for a blog post...then when I get the chance to actually do it...my mind goes blank. I think I need to watch more Sex and the City episodes so that I can learn to talk to myself more like Carrie does. Maybe I should just start thinking in rhetorical questions. Such as, what is the meaning of a calorie? Do we really need to count these so called calories in order to be happy in life? Or are we just kidding ourselves?

I have been subbing classes a good bit lately, although no one has actually been showing up...where are you guys? What? You think just because it's summer you can go out and have fun and go on vacations and not come work out?! Okay fine, you can. But, it makes me sad to write the number 0 next to a class :/ So, please. Come back.

I wore my heart-rate monitor during my cycle class the other day to make sure I am putting in my burned calories accurately. The class was a little over an hour long and I was working pretty hard and I only burned about 430 calories (I wanted to burn 500!). So, be careful, and unless you are wearing a heart rate monitor (which is the only device I know of that is even remotely accurate) then I wouldn't take what your exercise machine, etc. says to heart.

Caloriessss...I was curious to see how long I have been tracking my calories with SparkPeople...I haven't missed a day since November 17, 2009. I can't decide whether I should be proud of that or slightly disturbed. I'm going to go with the former. ;) I've had a couple of people mention things like how I can keep up with the calories or eat 'healthy' all of the time. Well, firstly, in my mind I don't eat healthy 'all of the time.' But, I think that is partly because I know other people who eat better than I do and I aspire to be that way, (ahem, Sara at My Less Serious Life). It's not really something I think about as far as the counting calories go. It's just my lifestyle. I have always done it and I couldn't imagine not doing it. Do the calories run my life? No. But, they are a part of it.

As for the eating 'healthy' part. To me, indulging would include eating too much trail mix (the good kind..with chocolate!) or having a margarita at dinner or the Skinny Cow ice creams that are so delish. There aren't many things that I 'crave' or want that aren't 'healthy.' I am not depriving myself or ignoring my wants. I just honestly don't want a lot of the typical 'bad' things and I never really have... Now, if you have a cherry pie or something...then we'll talk. But, who ever has pie around?

Someone get to work on my Birthday Pie for next year. Stat.




Anywho, that's my spill on those topics. Let's move on to fun stuff shall we? My last post was July 13th (sorry!)so let's just start with this past Sunday and do this week. Update: Hi There Hump Day!

Welllllll...hello there! It's been a while! Things tend to either be slow or kind of crazy around here. Instead of posting 289357 days of food/exercising I will post summaries. Aren't you excited?! -__-


 
Breakfast one day: Oatmeal with peaches and peanut butter! Yum!

July 7th: 1484 Calories eaten; Swimming=300 Calories burned

July 8th: 1102 Calories eaten; oopsie. I hurt my back the day before swimming so I took a couple of days off.

Another Breakfast: 1 Egg, 1 Bagel Thin, Yogurt with Strawberries and Almonds

July 9th: 1345 Calories eaten; (2 days off!)

July 10th: 1287 Calories eaten; Step=425 Calories burned

Lunch one day: 3.5 oz Tilapia, Steamed Green beans with Almonds, 1 Gel Fruit Cup

July 11th: 1446 Calories eaten; Kick n Sculpt=425 Calories burned

I made my Yummiest Spinach Lasagna one night! But, I only used 2 cups mozzarella!

July 12th: 1428 Calories eaten; Cycle=400 Calories

Lunch: Yes, more Tilapia. It was on sale!

July 13th: 1408 Calories eaten; 45 minutes RIPPED & 1 hr Cycle= 750 Calories burned


So yeah, a lot of bleh numbers, but for those calorie fanatics out there this was for you ;)

I have been contemplating this week about which season to start with for RIPPED this fall at UGA. I finally decided on Season 3. I love the music, it's an awesome workout and it seems a bit easier to teach than Season 1. I did it again today and love it! Now I just need to start working on doing it without the video...eek.

In other news, as of this moment, we are 1 day, 2 hours and 52 minutes away from the premiere of Harry Potter and the Deathly Hallows Part II!!!! Soooooo excited! And all of you haters can keep on hatin'. I enjoy Harry Potter and I'm not ashamed of it. Am I going to go get dressed up like a wizard for the premiere? No. (But, more power to you). However, I do love the series and I don't see anything wrong with that. *end rant*

It's getting excellent reviews which makes me even more excited. I know that it's going to destroy me and I may as well not wear mascara...but, did you see Mrs. Weasley in the trailer? Ohhhh I cannot wait for that part. (HP fans you know what I am talking about.) I also cannot wait to see how they portray Snape's story. I've read that they did a wonderful job!

Random: Coupon Frenzy!

I've been clipping coupons for a few weeks now and just using them randomly when I need something. Well, today I decided to take all of those coupons that have accumulated and do one big buy. I chose to do it at Wal-Mart because their prices are already lower than other stores around here. Yes, I hate Wal-Mart. I have anxiety every time I go in that store. It's just so chaotic. Regardless, I wanted to see how much I could save. I only bought the 'non-food' items at Wal-Mart, then I went on to Publix for the groceries.

Now, I am far from those ladies on TLC who can get 1 million dollars worth of stuff for 2 cents. But, I was pretty proud of my haul and how much I saved. Let's just say we are set for a while! ;)

It's pretty annoying that Wal-Mart doesn't put 'amount saved' on their receipts. Because I'm not going to sit here and add up every single dollar :/ What I can tell you is that the total was about $270 or so before my coupons and I only paid $191.88 after my coupons. So that's some pretty good savings to me! And it's stuff we actually use. DH laughed because most of it was for him and he now has a 'store' in his bathroom cabinet.


what? I'm not laying all of that out nice and pretty. I could barely get it all put away! ;)

I used coupons at Publix too. But, food coupons are just a lot harder for me. There doesn't seem to be many for foods that we actually eat. So, today I only bought things that were on sale and that I had a coupon for. According to the Publix receipt, I saved $42.75 ($31.15 from sales and $11.60 in coupons)

The two things I was most proud of were the toothbrushes and the Crystal Light. I had a coupon for $2 off 2 Oral B toothbrushes. The toothbrushes were $1.39 each so I got them for 39 cents each!! Woo hoo! I had 2 coupons so I got 4 toothbrushes.


For the Crystal Light, it was buy one get one free at Publix and I had a coupon for $1 off. So they were $2 a piece and with the coupon it made it $1!

Couponing is fun! :)

Someone was asking me where I get the coupons. It took me a while to make my 'stockpile,' but I got them from newspapers, online and the actual stores. Our Publix takes coupons from Ingles and Kroger as well. Check out websites like southernsavers.com because they are very helpful!

Update: Happy (super late) 4th of July?

Yes, I know I suck at life and that this post is extremely late. This week will be busy because it is a) a holiday week and b) I had a lab practical and a lecture exam along with the other 39285 things I have to do. But, we are all busy, no? I also decided not to post as much this week because I was afraid I was starting to annoy you guys with a post every single day?

This post is obviously from this past Monday. I didn't have class or work which was nice and that night we went to a friend's house and grilled out with everyone. We had a great time! It was nice to just hang out and laugh! And they discovered that I am awesome at video games; I mean, was there ever really any doubt about that? ;)

Recipe: Easy Peasy (Vegan) Biscuits



This is by far the easiest biscuit recipe I have ever used and they turned out great! I made my version Vegan, but that is only because that is what ingredients I had on hand. Now, I think some people get confused with thinking that just because something is 'Vegan' that it is automatically 'healthy' for you. This is not always the case. For instance, in this recipe I used Earth Balance Vegan Shortening, which contains the following:

Non-GMO ( Not-Genetically Modified): 
-Expeller-pressed natural oil blend (palm fruit, soybean, canola and olive oils). 
Contains soy.
 

Nutrition Facts:
Serving Size 1 tbsp (14g)

So, as you can see there is still a substantial amount of fat in just 1 Tbsp! The point here being that you should just be careful and always read the labels :)

I prefer to 'bake' with applesauce and/or pureed bananas instead of using any type of butter, margarine, shortening, etc. But, I don't think that would be very good in these biscuits ;)


DH loved these biscuits too and couldn't believe they were actually vegan. Keep in mind, they are plain biscuits. But, I like mine plain or with low sugar jelly!

Ingredients:
-2 1/4 cups All Purpose Flour**
-1 tsp baking powder
-1/2 tsp baking soda
-1/2 cup Shortening (I used Earth Balance)
-1 cup Milk (I used Almond milk of course!)

**You could also use just Self-Rising flour and omit the baking powder and baking soda.

Directions:
-Preheat oven to 425 degrees F
-Mix all ingredients in a bowl

 

-Begin to shape the dough into biscuits and place onto a pan sprayed with Pam
--You will need extra flour for your hands when shaping the dough into biscuits because it will get sticky
-Place in oven and bake ~20 minutes. My oven seems to burn things quickly and my pans are dark, so I cooked mine for 18 minutes and they were perfect!

Weekend Update: Sunday FUNDAY!

On another note, I stayed up past 3 am last night reading on my kindle...I haven't been reading much this semester/summer and this is why. I'm like an addict when it comes to reading and I can't stop myself. I read an entire book last night and half of another one. I.Can't.Stop. I got a new cover for my kindle yesterday too and it is sooooo pretty :)

Running was much more painful today and I should not have tried to run two days in a row. I'm determined to finish a tri, but I'm not going to risk injury to do it. Has anyone else had problems with their meniscus?

Weekend Update: But, it's the Weekend!

You didn't think I would leave you guys just because it's the weekend did you? ;)

Here is the thing about weekends/holidays, a lot of people think that they can eat/do whatever they want because 'it's a holiday,' 'it's the weekend,' 'it's Tuesday.' Seriously, this rationale could apply to everyday. I'm not saying don't 'indulge' a little, I'm saying don't negate all of the hard work you have done just because it's some kind of 'special' day. Your body doesn't know the difference. :)

Today was the second time I have attempted to run in probably 3 years. I did 3/4 mile without stopping, but then my knee started with the pain (stupid meniscus) so I walk/jogged until I reached 1.5 miles.
