Recipe: The Most Amazing Cookbook You Will Ever Buy (& Chocolate Zucchini Bread)

I got the most amazing cookbook this week. You should have seen how giddy I was when I opened it and started looking at the recipes. DH just laughed at me because I hardly ever get excited about anything. I got my sticky tabs and started marking recipes that I liked right away. By the end, DH said 'Why didn't you just mark the whole book? You basically did.' Whatever, DH. I didn't mark EVERY single recipe. Okay, almost. But, not really.

I must give credit to Sweet Tater Blog for introducing me to this book first. I have seen her mention it and I thought I would give it a try, but wowzers! I didn't expect it to be so great. The recipes are simple, they are easy and they taste GOOD. I have already done two recipes and even DH has marveled at how good and easy they were.

My first endeavor was her Chocolate Chip Zucchini Bread (What? I have a bread obsession. Leave me alone.)

This bread is seriously GOOD.

Here is what I did: (You can find a similar recipe for muffins here.)

Ingredients:

-2 1/2 Cups White Whole Wheat Flour (Yes, you read that correctly)
-1 1/2 tsp baking powder
-1 tsp baking soda
-~1 tsp salt
-2 heaping tsp cinnamon (because I love me some cinnamon)
-~2 tsp vanilla extract
-2 cups Shredded Zucchini
-1/2 cup unsweetened applesauce
-~1/3 cup oil (I only have olive oil...sooo..)
-1/2 to 1 cup Splenda Brown Sugar Blend
-A handful of chocolate chips (or however many you can sneak in)

Directions
-Preheat Oven to 350F
-I basically combined all of the dry ingredients in one bowl, and all of the wet ingredients in another bowl
-Then I combined them all together in one bowl and stirred until it was just mixed.
-I cooked this for about 48 minutes in a dark pan (directions say 50-60 minutes).

And if you don't think this bread is amaze-balls, then I just don't know what is ;)

    Also, I have seen been eyeing this cookbook online - sounds like it would be a good purchase (or I could just wait for you to make and post all the yummies) :)
