Recipe: Pumpkin Yeast Bread

Can I just say that I am a master procrastinator? I should be studying for my two finals this week...However, the amount of other crap I get accomplished during this time is pretty impressive. I did mine AND the DH's laundry this weekend. I also cleaned the apartment, baked fresh bread TWICE and cooked dinner most nights. I also did all that another naggy stuff, like pay tuition, pick up medicine, make appointments, and you know, go to work.

OH. AND I finally finished my online class lessons! WOO HOO! (I've been working on this class for a year...) I made myself sit down for 6 hours on Sunday and just do them ALL. I was so sick of thinking about how I needed to do them. So, boo yah.

On to the pumpkins.

If you know me, even just a teeny bit, you know that I love Fall and Winter. Something about it being cold outside and me being all snuggly in a hoodie and a blanket with a hot cup of tea and my spiced candles burning is just so amazing to me. I LOVE it.

I am obviously going through withdrawals at this point because it has been Summer here for about 3293879285 months already. So, I decided to pretend and I made Pumpkin Yeast Bread the other day.

I would have taken a picture of it for you, however, seeing as I have already ate half of it...yeah...
I pretty much just have it as a meal...breakfast...lunch..dinner..dessert. It's very flexible.

I got the recipe from The Domestic Vegan and I'll share it with you here. (You can also find it here.)

-¾ cup canned pumpkin, pureed
-½ cup Almond Milk (may need more, just watch the dough)
-¼ cup Earth Balance nondairy butter, melted 
-1 Tbsp blackstrap molasses
-1 tsp vanilla extract
-⅓ cup brown sugar, loosely packed (I used Splenda)
-2 ¾ cup flour (I used White Lily Bread Flour)
-2 Tbsp vital wheat gluten (optional, but I suggest it)

-I used probably 2-3 tsp of Pumpkin Pie Spice or you can use the following:
--1½ tsp ground cinnamon
--¾ tsp ground nutmeg
--½ tsp ground ginger
--¼ tsp ground allspice
--1/8 tsp ground cloves

-¾ tsp sea salt
-1 packet active yeast OR 2¼ tsp

-I used my Bread Machine again.
-Wet ingredients, Dry Ingredients, Yeast (in a well) and then choose your settings! (I choose basic and a medium crust)

Mine basically looks like this; but, you'll never know...muahahaha
