Recipe: Greek Gyro with Tzatziki

Whoa, tzatkikikiki is a hard one to spell. I made these last week and they were divine.


I followed the recipe verbatim (a first, I know!) so, I don't want to post the whole recipe. You can find the recipe for these Tempeh Greek Gryos with Tzatziki  at this link.

Step 1: Slice Tempeh

Marinate Tempeh for at least 4 hours (I let it marinate all day)

Make Tzatziki sauce so that it can 'marinate' for at least 4 hours

Cook Tempeh in skillet with Pam or Olive Oil until browned
Warm each side of a pita in a skillet;
be sure to do this or the pita will probably break apart 

Assemble to your liking and eat up!

Weekend Update: Lazy? Sundays

Sunday is the one day that I get to sleep in late. Therefore, I definitely take advantage of this. By 'taking advantage' of this, I mean that I was in the bed until probably around 1pm. Don't judge me.

Also, we went to a corn maze yesterday...I think I will stick with Haunted Houses...

It's all fun and games now. But, seriously, I wanted out.of.there.

Today I taught a 60 minute Cycle class and I did 30 minutes of BodyPump.

Since I slept late, I had 'brunch?'

-1 egg with Basil, Oregano, Garlic and Parmesan cheese (reduced fat)
-2 slices wheat toast; 1 with Apple Butter from Washington Farms
along with:
-1/4 cup Chobani 0% Plain Greek Yogurt
-~1/2 cup frozen Mango
-7 almonds
-1 Tbsp Peanut Butter/Chocolate Chips

I cooked dinner when I got home from Cycle, BodyPump and a meeting. While I was cooking, I 'recovered' from working out with these babies:

-1 serving

For dinner, I wanted to cook Gnocchi, but I didn't want to use the same Skillet Gnocchi recipe that I always use because I need a break from beans today...So, I literally just concocted something. It wasn't 'pretty,' but it tasted pretty good!

Gnocchi, Spinach, Mushrooms, Onions, Spaghetti Sauce, Garlic,

Then dessert was of course these amazeballs (my new favorite word if you haven't noticed):

Recipe: Miniature Pumpkin Croissants

Are you ready for your world to be rocked? Because these little amazeballs are gonna do it. I saw this recipe on Pinterest last week and decided that I had to make them because they were so easy. Plus, it's Fall Y'all, so we need some pumpkin recipes up in here.


-1 to 2 packages refrigerated Croissant dough (I had 1 regular package and a half package)
-1 can Pumpkin (I would use only half of this next time...)
-1/2 8 oz. package low fat cream cheese
-1 1/2 tsp Pumpkin Pie Spice
-3 Tbsp Splenda Brown Sugar Blend (Hate on, haters)
-4 Tbsp Splenda Brown Sugar Blend
-1 Tbsp Pumpkin Pie Spice

-Preheat oven to 375 degrees F
-Mix canned pumpkin, cream cheese, pumpkin pie spice and 3 Tbsp Splenda brown sugar blend

-Take Croissant dough and split in half

-Spread the pumpkin mixture across each piece of dough

-Mix the 4 Tbsp Splenda Brown Sugar Blend with 1 Tbsp Pumpkin Pie Spice and roll the dough through this mixture

-Bake for about 15 minutes at 375 degrees.
 -Serve and enjoy!

Update: Workin' On My Fitness & Stuff

Have your legs ever been so sore that you can't even walk straight? That was me today. Typically, I don't really get sore and I like to think it's because I have variety in my workouts and that I work most of the muscles. However, I think I forgot to factor in intensity. For example, yes, I may work out my legs because I cycle and we do squats in R.I.P.P.E.D., but I did Bodypump yesterday and with the extra weight and time it definitely made a difference.

Oh yeah.

Saturday I taught a 60 minute Kick N Sculpt class and it was oh so fun. I still love kickboxing. On Sunday, I taught a 60 minute Cycle class. I need some new cycle inspiration...getting a bit...burnt out. Yesterday, I did 25 minutes on the elliptical, 10 minutes on the stationary bike and a 60 minute BodyPump class. and a Today, I taught a 6:00AM 45 min Cycle/15 min ab class and this evening I did 30 minutes on the elliptical and 15 minutes of work with a resistance band.
Let's just say...yesterday was prettyyy crazy. 

Apparently, when you get your oil changed, they don't check your battery...

Yesterday's food consisted of:

1 Smoothie with: 
-1/2 Frozen Banana
-1/2 cup Frozen Mango
-1/2 Tbsp Skippy Natural
-1 cup Almond Milk

A pretty sandwich, eaten in my dead car:
-2 slices wheat bread
-Deli Turkey Meat

Right before the lights went out...forever.

I baked Tilapia with Garlic and Lemon Pepper served with Brown Rice

-1 Sugar Free Vanilla Latte, Iced
Yogurt Bowl:
-1/4 cup 0% Greek Yogurt, Fage Brand
-1/2 cup Mango
-1/2 Tbsp Nutella (evillll stuff)
Today's Food:
-1 Kashi Granola Bar before Cycle
Egg Sandwich after Cycle:
-2 slices whole wheat toast
-1 egg
-1/2 Tbsp Reduced Fat Olive Oil Mayonnaise

-2 cups Romaine Lettuce
-1 Roma Tomato
-1/8 cup Mozzarella
-1 Tbsp Ginger Dressing


I made pasta with bow tie noodles and tofu
-Tofu sauteed with Nutritional Yeast and Soy Sauce
-1/2 cup cooked bow tie, wheat pasta
-Sun Dried Tomatoes
-Olive Oil and Vinegar
-Steamed Broccoli
-1 Easy Peasy Vegan Biscuit

-1 Kashi Granola Bar
Yogurt Bowl:
-1/4 cup 0% Greek Yogurt, Fage Brand
-1/2 cup Mango
-1/2 Tbsp Nutella (evillll stuff)
-10 almonds

Recipe: Southern Style Tofu

Hey guys y'all! I wanted to make DH something a bit more...southern...the other night because I feel like he doesn't get that very often. However, I've been trying to fix more 'meatless' meals so I wanted to do a sort of 'twist' on a southern meal using tofu. I know a lot of you are skeptical of tofu, but I honestly think that is because a) you have never had it or b) you haven't had good tofu.

I even broke out this lovely bread basket with an awesome warming stone AND a pretty red cloth. I'm classy like that. I decided to make the tofu reminiscent of 'fried' chicken.

I decided to serve this with canned veggies that I already had.

Here is what I did:
(Inspired by this recipe.)

-Firm Tofu, Sliced and pressed for at least 45 minutes or until all excess liquid is removed
-1 cup Almond Milk 
-1 tsp Lemon Juice
-1/3 cup Bread Crumbs
-1/3 cup Nutritional Yeast Flakes
-1 tsp Minced Onions
-1 tsp Garlic Powder
-1/2 tsp Dry Mustard
-Olive oil

-Pour the almond milk and lemon juice into a shallow bowl
-Mix all dry ingredients in one bowl
-After pressing the liquid from the tofu, dip the tofu slices into almond milk and lemon juice mixture
-After dipping the tofu into the almond milk, coat the tofu with the dry ingredients mixture
-Cook each piece of tofu in a skillet that has a small amount of olive oil
-Cook each side for about 5 to 7 minutes, until crisp
(Another alternative, one that I will do next time, is to bake the tofu instead of using a skillet)

Update: How YOU doin'?

Oh, hi. Remember me? It's been awhile...again...sorry about that. Pretty much the same ole stuff going on around here. Eat, sleep, workout, school, do it all over again. I was in an awesome friend's wedding this weekend:

Almost time for the newlyweds to leave!

The DH and I also celebrated our 2nd wedding anniversary. I can't believe it has been two years already!
Yes, for the haters, I did eat some of that dessert, because it was FREE. lol.

Weekends like this are always fun, but after about 2 days of not eating like I normally do, I start to feel...gross...sluggish...etc. I didn't eat 'too much' and the food wasn't 'bad' food, but it just wasn't as 'clean' as I would like it to be. For our anniversary dinner we had this amazing Spinach salad with warm good. I ordered fish, but I literally couldn't eat it because I was already so full! I tried to, but DH ended up eating it. I had a bite of the dessert and it was yummy! 

On Saturday, we had the Bridesmaids' Luncheon and it was so fun and nice.

I had already ate breakfast at the hotel because I'm typically starving hungry when I wake up. The luncheon had such a pretty presentation:

 Cheese Crackers, Frozen Fruit/Yogurt, Chicken Salad in Heart Shaped Crusts

The luncheon was at the Swan House, hence the Swan dessert. I didn't eat much of the actual lunch, but I tore up the chocolate mousse inside this beast. Mmmm...Hey, you gotta live a little.

The wedding was beautiful, as was the bride. 

Moving on to some food happenings that aren't related to the wedding weekend. DH made this Tomato Potato Bisque (Say that 5 times fast). 

So yummy for these cold and rainy nights we have had lately.

Do you ever think that you are craving something and then you get it and realize it's a bad idea every time? That's how I feel about two places in town: Keba and Earthfare. They sound good in my head, but I am always let down and regret it...

 Squash, Green Beans, Red potatoes with deathly spikes and Tofu

At least it kind of looks pretty, right? The Tofu was good, but the Green beans were eh and the potatoes seriously had this seasoning that was like eating spikes. I had to wipe them off.

And can we talk about this:
Will someone who knows more than me please tell me what this is? So that I can be sure to never get it again? There are few things that I truly don't like. 
Let's add this to that list. 

This week I was craving a good sandwich. A friend in one of my classes brings a sandwich on her 'rich girl bread' (you know who you are) and it made me want a really good sandwich. So, I bought meat from the actual deli, which I pretty much never do.

Wheat Bread (toasted), Peppered Turkey, Tomatoes, Lettuce, Mustard

Served with a salad and grapes

I taught 6am cycle twice this week and each time I have had a Kashi granola bar before class and then after class I had eggs and toast:

 1 egg, 1 Tbsp Almond Milk, Fresh Spinach and onions

With 2 pieces Whole Wheat Toast
