Recipe: Southern Style Tofu

Hey guys y'all! I wanted to make DH something a bit more...southern...the other night because I feel like he doesn't get that very often. However, I've been trying to fix more 'meatless' meals so I wanted to do a sort of 'twist' on a southern meal using tofu. I know a lot of you are skeptical of tofu, but I honestly think that is because a) you have never had it or b) you haven't had good tofu.

I even broke out this lovely bread basket with an awesome warming stone AND a pretty red cloth. I'm classy like that. I decided to make the tofu reminiscent of 'fried' chicken.

I decided to serve this with canned veggies that I already had.

Here is what I did:
(Inspired by this recipe.)

Ingredients:
-Firm Tofu, Sliced and pressed for at least 45 minutes or until all excess liquid is removed
-1 cup Almond Milk 
-1 tsp Lemon Juice
-1/3 cup Bread Crumbs
-1/3 cup Nutritional Yeast Flakes
-1 tsp Minced Onions
-1 tsp Garlic Powder
-1/2 tsp Dry Mustard
-Olive oil

Directions:
-Pour the almond milk and lemon juice into a shallow bowl
-Mix all dry ingredients in one bowl
-After pressing the liquid from the tofu, dip the tofu slices into almond milk and lemon juice mixture
-After dipping the tofu into the almond milk, coat the tofu with the dry ingredients mixture
-Cook each piece of tofu in a skillet that has a small amount of olive oil
-Cook each side for about 5 to 7 minutes, until crisp
(Another alternative, one that I will do next time, is to bake the tofu instead of using a skillet)
-Serve
