I'm still thinking about my decision on whether or not to do Yoga Teacher Training and I'm feeling more...at peace about it...and I'm pretty close to making up my mind...

 I typically pack more than I plan on eating just in case I end up staying on campus longer than planned (which happens more than I care for it to). Today was actually a much shorter day so I ended up only eating:

Peanut Butter & Jelly Sandwich:
-2 slices Arnold Whole Wheat Bread
-1 Tbsp Trader Joe's Almond Butter
-1 Tbsp Lower Sugar Jelly

With:
-1 package Organic Baby Carrots
-1 Light String Cheese

Dinner:

Amy's Cheese & Spinach Pizza

Snacks:

When I got home from class this afternoon, I had a small serving of my leftover Homemade Potato Soup.  

And my after dinner dessert was, of course, a Greek Yogurt Bowl with: 
Mango, Almonds, Organic Dark Chocolate and 1/2 of a cinnamon graham cracker.

Thoughtful: To Yoga, Or Not To Yoga

No, those aren't pillows. They are bolsters!
I went to yoga twice yesterday and I'm going to a 1 hour and 15 minute class today. (Plus I taught Cycle at 6am and I'm possibly teaching a cardio class tonight at 6:45...) I've also scheduled on my calendar every yoga (and fitness) class that I plan on going to (or teaching) between now and the end of the year. Yes, I know I have issues.

I've always been interested in yoga. Someone like me who deals with anxiety and stress (about everything) has to find ways to deal with it (that are healthy!). Yoga definitely helps me with that. I love going into a class and being able to focus on just my breathing and the flow. I feel strong and confident during the poses/flow and the perfect class leaves me just exhausted enough that I actually want to lay there with my eyes closed for the last few minutes. It's amazing how much better you feel.

I have always wanted to get into teaching yoga, but teaching yoga is not like teaching aerobics. It's a bit more involved. I am looking into a 200 Hour RYT program. If I had the money (and extra time) I would probably not be fretting over this decision so much. Okay. That's a lie. BUT, it would probably be an easier decision (right?). I just worry that my practice isn't strong enough or maybe it's not my personality..or ..or...the list could go on. I'm not going to sit here and bore you with all of that, however, I will ask you what your thoughts are on this topic?

Yesterday I was finally able to get back into my 'normal' routine. I had my first smoothie in over two weeks, I had an organic PB&J with organic baby carrots and string cheese for lunch. In the afternoon I had a Clif Kid's Z Bar and a soy latte. Before my second yoga class yesterday evening I had an apple.

For dinner, I made risotto and sauteed shrimp:

Update: Gobble, Gobble

I hope everyone had a great Thanksgiving. We have SO much to be thankful for. I am thankful for my amazing husband, family, friends, pups and, of course, for my blog readers! What all are you thankful for?

Frozen Peanut Butter Pie with Homemade Chocolate Graham Crust
I decided to contribute some yumminess to the feasts with our families this year. I know what you are thinking, this pie doesn't look 'healthy.' You'd be correct, even though I did get it from the Health Magazine Website. But, the point is that it's Thanksgiving! If you are going to have a 'cheat' day, then this is the day for it!

I followed the recipe pretty closely, except I used organic Brown Sugar instead of regular white sugar.

I wish I hadn't told anyone they were Vegan, because they immediately think that they won't taste as good. I think people believe just because something is Vegan, then it is 'healthy' food. Um. Definitely not true. This is not a cupcake I would suggest eating as part of your every day diet, lol. It still has sugar, 'butter,' and 'cream cheese' and that is true frosting, aka allllll organic powdered sugar. When everyone actually tried one they were amazed. I had to literally stop my niece from eating a third one! (What? I think 2 cupcakes is enough for a 4 year old!)

Soooo...I like to bake whenever I'm stressed. I wasn't stressed this week, so baking wasn't as much fun? Weird, huh? Or, it could have been that these recipes were a whole lot more involved than the recipes I typically do. If it weren't for DH helping me clean the dishes, I may have lost my mind. I swear I used every measuring cup, measuring spoon and mixing bowl we have. Needless to say, after making both of these, I wasn't in the mood to make the Green Bean Casserole I had decided to make earlier in the day. We decided to wait until the morning to make it.

If you know me, you just laughed a little. Me? Wake up early to make something? You're right. It didn't happen. But, DH got up and made the whole thing! So proud!

All in all, we had a great Thanksgiving! We were so grateful to be able to spend time with our families and be able to have such an abundance of food. In all our fun and running around we completely forgot to get someone to take our picture! So, here is a nice and tired looking picture of us after finally returning home and getting all of the leftovers (an absurd amount!) and the pups inside.

WIAS: What I Ate Sunday-Philly Style

Finally. All of the students can breathe a sigh of relief because we are on Thanksgiving Break.

Except, not really, right? Because, this is the time to play catch up with projects and finals that are coming up next week...and working on applications and cover letters for the dietetic internship matching that is coming up in February.

Sorry to burst your bubble.

Did anyone go see that new movie that came out Friday? What's it called again? I like to refer to it as Breaking Dawn: Before the Spawn along with the ladies at Twitarded (if you like Twilight, but realize how ridiculous it is, then that site is prreettyyyy hilarious). Let's be clear. I know that Twilight is horrible. Horrible writing for the books. Horrible acting, screenwriting and everything else for the movies. But, there is just...something...about the books/characters that suck me in (no pun intended). I will say, however, this last book....this last book was SO bad that I literally get angry every time I talk or even think about it. SO.BAD. Unbelievably, infuriatingly bad.

With that said, the movie couldn't have been any worse than the book in my mind. If anything, it would be an improvement. For the most part, I would say it was an improvement (but, that's not saying much).

Well, moving on now. Today I slept in after not sleeping all week. By not sleeping all week, I mean staying awake until about 6:00 or 7:00am and waking up at 10:00am. So, yeah, no sleep. Once I finally woke up, I had....lunch.

Cheese, Spinach, Tomato, Light Honey Mustard

There has been A LOT of soup going on lately. Like I said, I deal with nausea a good bit and it always seems to get worse during the cooler weather months. So, lots of soup, hot tea and comforting food :)

For dinner, we made these Mushroom Philly Cheese Sandwiches . Our own altered version of course (aka, no bell pepper because DH is not a fan)

-1/4 Cup 0% Greek Yogurt
-1/3 Cup Mixed Frozen Yogurt
-1 Tbsp Dark Chocolate
-1/8 cup Trader Joe's Pecan Praline Yogurt

WIAT: What I Ate Tuesday/Baked Ziti

This has been one of those weeks that seems to keep going and going and going. Even Lily is over it.

I'll study for you mama. But, only for cheese.

I actually took pics of most of what I ate yesterday. Minus breakfast, of course. Lately, my breakfasts have been on the small side because I haven't had much time, hence the granola bars.

Breakfast:
-1 Luna Bar, S'mores Flavored

Lunch:
Salad: Romaine Lettuce, Cheese & Sauteed Tempeh with Onions

Pacific Natural Foods Organic Creamy Tomato Soup

Dinner:
Baked Ziti with Vegetables (Inspired by a recipe from My Less Serious Life)

Snacks:
No pictures for snacks, sorry!
-0% Greek Yogurt, Plain with Mixed Fruit, Dark Chocolate chips, Almonds
-1 Serving Mission Tortilla Chips with Organic Publix Salsa

Here is the recipe for the Pasta:

Ingredients:
-Whole Wheat Pasta (I used Bow Tie)
-1/2 Cup Reduced Fat Mozzarella Cheese
-1/3 Cup Parmesan Cheese
-1 Can Diced Tomatoes
-1 Package Frozen Yellow Squash, Sliced
-1/2 Medium Onion, Chopped
-Basil
-Oregano
-Garlic

Directions:
-Preheat oven to 400F
-Begin boiling water for pasta and cook according to directions
-Saute onion and yellow squash
-Add diced tomatoes, basil and oregano
-Add cheeses
-Once pasta is finished, drain and add to vegetable mixture


-Pour mixture into a greased baking dish
-Bake for 15-20 minutes
 -Serve!
