Update: Gobble, Gobble

I hope everyone had a great Thanksgiving. We have SO much to be thankful for. I am thankful for my amazing husband, family, friends, pups and, of course, for my blog readers! What all are you thankful for?

Frozen Peanut Butter Pie with Homemade Chocolate Graham Crust
I decided to contribute some yumminess to the feasts with our families this year. I know what you are thinking, this pie doesn't look 'healthy.' You'd be correct, even though I did get it from the Health Magazine Website. But, the point is that it's Thanksgiving! If you are going to have a 'cheat' day, then this is the day for it!

I followed the recipe pretty closely, except I used organic Brown Sugar instead of regular white sugar.

It was a hit! It didn't even go home with me, lol. My brother got the rest of it!


I also made Vegan Pumpkin Pie Cupcakes from a recipe by Sweet Tater Blog. 

So.freaking.delicious.


I wish I hadn't told anyone they were Vegan, because they immediately think that they won't taste as good. I think people believe just because something is Vegan, then it is 'healthy' food. Um. Definitely not true. This is not a cupcake I would suggest eating as part of your every day diet, lol. It still has sugar, 'butter,' and 'cream cheese' and that is true frosting, aka allllll organic powdered sugar. When everyone actually tried one they were amazed. I had to literally stop my niece from eating a third one! (What? I think 2 cupcakes is enough for a 4 year old!)

Soooo...I like to bake whenever I'm stressed. I wasn't stressed this week, so baking wasn't as much fun? Weird, huh? Or, it could have been that these recipes were a whole lot more involved than the recipes I typically do. If it weren't for DH helping me clean the dishes, I may have lost my mind. I swear I used every measuring cup, measuring spoon and mixing bowl we have. Needless to say, after making both of these, I wasn't in the mood to make the Green Bean Casserole I had decided to make earlier in the day. We decided to wait until the morning to make it.

If you know me, you just laughed a little. Me? Wake up early to make something? You're right. It didn't happen. But, DH got up and made the whole thing! So proud!

All in all, we had a great Thanksgiving! We were so grateful to be able to spend time with our families and be able to have such an abundance of food. In all our fun and running around we completely forgot to get someone to take our picture! So, here is a nice and tired looking picture of us after finally returning home and getting all of the leftovers (an absurd amount!) and the pups inside.
