Pumpkins: An obsession

Seriously. The pumpkin obsession is getting a bit out of hand.

 No, I did not go to the store and buy 6 cans of pumpkin...that would be...crazy...

If you know me, you know that Halloween is quite possibly my favorite holiday. I'm so irritated that I didn't get to dress up and go out this year. No, I had to be the nerdy, responsible student. Stupid real life responsibilities. However, we did get to carve a pumpkin.

I have been dreaming about roasted pumpkin seeds for about 2 months now...heavenly...

I then went on to make Pumpkin Oat Bread from a recipe I got from My Less Serious Life.

Beautiful.

Here is the recipe for this masterpiece:

Ingredients:
-1 cup Oats
-1 1/2 cup All Purpose Flour
-3/4 cup PUMPKIN
-1/2 cup Soy Milk (Or whatever milk you prefer)
-2 eggs OR 2/3 cup Applesauce OR 1 banana, mashed (No excuses here guys!)
-(1/4 cup oil, UNLESS you used Applesauce)
-1 tsp Pumpkin Pie Spice
-1 tsp Ground Cinnamon (Let's be real, use any 'Fall' type spices that you have)
-1/2 cup Brown Sugar Splenda and 2 Tbsp Molasses (This is what I had, improvise!)
-1 Tbsp Baking powder
-1 tsp Salt
-1 cup Walnuts (Optional!)

Directions:
-Pre heat oven to 350 F
-Mix ingredients in bowl
-Grease Bread Pan
-Pour ingredients into said pan
-Bake for 55-60 minutes or until done

**EDIT:
Guys, after making this post I decided that I had to have this bread as a quick and easy breakfast this week. I decided to make them muffins though for a) portion control and b) easy carrying, etc. Here are the changes I made:

-I used Apple Butter instead of Oil and I honestly think this is why it was soo much better!
-Chocolate Chips instead of Walnuts (maybe this is why it was better...)
-Just 1/2 cup Splenda Brown Sugar, no molasses.

  1. i am also obsessed with pumpkin. this pumpkin bread looks yummy and healthy. i made something similar recently. i also am eating pumpkin pie yogurt, pumpkin-hummus pizza, pumpkin oatmeal, not to mention pumpkin pie. i might crack open a new can tonight... :)

  2. oh ha! i didn't even see that you got this pumpkin bread off my blog. so fantastic when someone makes something you post. it was tasty wasn't it? i ended up eating this stuff for breakfast, snack, lunch, dessert...

  3. Yep! I linked it back to you :) It was very yummy! We didn't finish it all though, lol! But, the muffin version I made last night is going to mine and his breakfasts this week, so I'm sure they will all be gone! :)

  4. thanks for the link back. we didn't quite finish ours either although i froze some individual slices in ziplocks so i'm hoping those will be just as tasty in a week or so. glad you liked it!
