WIAT: What I Ate Tuesday/Baked Ziti

This has been one of those weeks that seems to keep going and going and going. Even Lily is over it.

I'll study for you mama. But, only for cheese.

I actually took pics of most of what I ate yesterday. Minus breakfast, of course. Lately, my breakfasts have been on the small side because I haven't had much time, hence the granola bars.

Breakfast:
-1 Luna Bar, S'mores Flavored

Lunch:
Salad: Romaine Lettuce, Cheese & Sauteed Tempeh with Onions

Pacific Natural Foods Organic Creamy Tomato Soup

Dinner:
Baked Ziti with Vegetables (Inspired by a recipe from My Less Serious Life)

Snacks:
No pictures for snacks, sorry!
-0% Greek Yogurt, Plain with Mixed Fruit, Dark Chocolate chips, Almonds
-1 Serving Mission Tortilla Chips with Organic Publix Salsa

Here is the recipe for the Pasta:

Ingredients:
-Whole Wheat Pasta (I used Bow Tie)
-1/2 Cup Reduced Fat Mozzarella Cheese
-1/3 Cup Parmesan Cheese
-1 Can Diced Tomatoes
-1 Package Frozen Yellow Squash, Sliced
-1/2 Medium Onion, Chopped
-Basil
-Oregano
-Garlic

Directions:
-Preheat oven to 400F
-Begin boiling water for pasta and cook according to directions
-Saute onion and yellow squash
-Add diced tomatoes, basil and oregano
-Add cheeses
-Once pasta is finished, drain and add to vegetable mixture


-Pour mixture into a greased baking dish
-Bake for 15-20 minutes
 -Serve!
