Weekend Update

First, can I just say that I wrote almost this entire post and it just disappeared. Gone. Poof.

Let's hope it doesn't happen again.

This weekend was pretty wonderful if I do say so myself. Nothing special happened, I just felt content, relaxed, at peace, etc. Monday is the last official day of classes and it is rather bittersweet. I am so excited about graduating, but I have really enjoyed hanging out with all of the people in my classes the past two years and making new friends. Not everyone is graduating, so when I start Graduate School in the Fall semester, I will still have some familiar faces!

On Friday, we had dinner with some friends and it was nice and relaxing. We went to Longhorn's Steakhouse and I had the Grilled Rainbow Trout with steamed veggies and a side salad. It was surprisingly good!

On Saturday, DH and I slept in, then we spent the day cleaning, doing laundry, and washing dishes. We treated ourself in the afternoon with our first Yoforia trip of the summer.

It was good, but it wasn't as good as I remember it...that's usually the case isn't it?

We went to the grocery store and decided to have Turkey Burgers and Homemade Guacamole with Tortilla chips for dinner.

I used my Chunky Guacamole recipe (minus the peppers), but I blended the avocados and fresh tomatoes together, hence the color and texture.

It was so nice to relax, eat a good homemade meal, and watch movies on Netflix with DH and the pups.

Sunday was spent working on study guides, papers, and teaching group fitness classes. I taught Cycle & Sculpt for an hour, then I taught a Kick & Sculpt class for about an hour.

Last Thursday was our last RIPPED class of the semester (with the exception of the extended schedule classes) and one of the participants gave me this beautiful surprise:

I am trying to keep it alive until this weekend when I can take it to my mother-in-law and she can plant it/keep it alive better than I can. But, it's already drooping...I am watering it and I put it in the sunlight/window...any suggestions? My thumb is more of a brown color instead of green...

WIAW #16: Last Week of School

It's the last full week of classes. I can't believe it!
It's so weird because part of me feels like I just started back and part of me feels like I have been in school FOREVER.
(I have been in college since 2005, with the exception of 1 year after my first degree when I worked full time).

I have a random breakfast picture to show you because it was pretty much awesome.

Take Your Lunch Friday


It's finally Friday.

I get the day off for rest on Saturday, then on Sunday we have Cycle and Totally Fit. This coming week will be the last full week of fitness classes this semester, sadness!

After I taught the Kickboxing class for the Relay for Life event, my cousin came over and I made the braided calzone for our dinner. It never gets old and it's so fast and easy.

Earlier that day, I had a great salad with tomatoes and avocado:

I have been packing my lunch almost every Friday this semester, since I have class from 8:00AM to 2:15PM. I wish I had been documenting what I take, but I honestly didn't think of it.

Here is what I took today:

Lettuce, Steamed Brown Rice, Black Beans, Avocado & Honey Mustard Dressing

I also packed fresh strawberries, an apple, and an orange. I ended up only eating the strawberries (with the bowl above, of course), because we are still doing food demonstrations in class and I ate some of the samples. Yum!

A special shout-out to my mother in law who has a Birthday today! Happy Birthday!

WIAW #15: I'm Back

It's been a while.

Let's get back on track this week, shall we?

As usual, there isn't a breakfast picture because I barely had time to make it, much less snap a picture of it. It was just a boring, yet awesome, PB&J with whole wheat bread, good ole smucker's jelly and Skippy Natural Crunchy.

After class, I went to the grocery store to grab a few items because I decided that I was craving my Kale and White Bean Soup.

It was definitely worth it.

Later that evening, while I was working on homework and practicing the new Power Section for RIPPED, I had some delicious oranges and peach fruit cup.

I taught a 30 minute Abs Class tonight and then a 1 hour RIPPED class. Even if I don't feel like working out, I always end up having so much fun teaching and feeling so much better afterward.

For dinner, I had more soup (what can I say, it was good) and I also had a sandwich with chicken, avocado and tomato.

My dessert, which is not pictured, was a 100 calorie Klondike Bar. Healthy? Eh. Delicious? Oh yeah. Nothing beats ice cream.

Are you amazed that I didn't have a salad today? Me too. But, there's always tomorrow.

Life: Yay For Strawberries

I'm so glad that strawberries are back! They are one of my favorite fruits and we usually go through about two packs a week during the summer. They are so good in salads, smoothies, snacks, etc.

I pretty much live off on strawberries and romaine lettuce during the summer. Okay, not really, but the level of consumption definitely increases!

While we are on the topic of fruits, when we were at the grocery store this morning, I discovered this:

Seriously. What the heck is that? Why do we need Bubble Gum Flavored Apples??!! Don't say it may help some kids eat more fruit either. I am ALL for trying new ways to get kids to eat more fruits and veggies, but this is just so unnecessary. Sorry, I just don't get it.

I also have to mention that we grabbed brunch at the Grit and it was scrumptious as usual. We sat outside and it was sooo nice outside and it was just peaceful watching all of the cars go by.

Stuck In A Rut, But With Some Great News

Clearly I am in a blogging rut.
I wish I could say that it's because I have been busy, (which I have been, I have been teaching 8-10 classes per week), but it's also because I just haven't had the...desire to blog recently.

So, let's try this again.

I have some GREAT news to share with you!
I have been accepted to UGA's Masters in Foods and Nutrition Program AND their Dietetic Internship Program! I am SO excited! It has been two weeks since I found out and I still cannot believe it. I keep waiting for someone to jump out and say, 'Just Kidding!'
The program starts in the Fall and I will be finished in two years. I am excited about having a break this Summer and then having a fresh start in the Fall.

I can't believe that we have only 4 more weeks until Graduation. This degree and what it leads to, has been my absolute dream and I cannot believe that it is finally coming true. I cannot wait until the day that I can have those letters behind my name: RD, LD. But, most of all, I cannot wait to start helping people in the area of nutrition.

I don't have many food pics because honestly, my food has been very boring. I am in a rut there as well, which probably explains my lack of blogging. There have been a lot of smoothies, salads with beans, bananas, and apples.

I am going to try and do better this week about blogging, but it has been somewhat nice to take a step back and not have to remember to take pics of everything, haha.
